These gooey and fudgy chocolate brownies are stuffed with Oreo biscuits for the ultimate easy baking recipe.
- 2 tablespoons flaxseed meal
- 150g dairy-free chocolate, chopped
- 110g (1/2 cup) coconut oil
- 2 teaspoons vanilla extract
- 150g (1 cup) plain flour
- 155g (3/4 cup, firmly packed) brown sugar
- 35g (1/3 cup) cocoa powder
- 1/4 teaspoon bicarbonate of soda
- 16 Oreos
Preheat the oven to 160C/140C fan forced. Lightly grease a square 20cm cake pan and line with baking paper, allowing the paper to extend up the sides
Place the flaxseed meal and 250ml (1 cup) water in a bowl and stir to combine. Set aside for 15 minutes to thicken. Meanwhile, combine the chocolate and coconut oil in a microwave-safe bowl and microwave on High for 2 minutes, stirring occasionally, until melted and smooth. Stir in the vanilla.
Sift the flour, sugar, cocoa powder and bicarb into a large mixing bowl and make a well in the centre. Add the chocolate mixture and flaxseed mixture. Fold together until just combined. Spread half the mixture into the prepared pan.
Arrange the Oreos in a single layer over the mixture, then spread the remaining mixture over the top. Bake for 40 minutes. Set aside to cool completely in the pan. Use the paper to lift out. Cut into squares.
