Polish Babka Cake

ingredients

Dough ingredients

480 gall-purpose flour
2 tbsp.yeast
90 gapple sauce unsweetened
100 gvegan butter
90 gcocoa butter melted
2 tbsp.vegetable oil
180 mlplant milk
70 gsugar
1 pinchsalt

Filling ingredients

200 gvegan butter
110 gcocoa butter melted
60 mlvegetable oil
6 tbsp.cocoa powder
450 gsugar 2 tbsp. by the side
60 gvegan dark chocolate
3 tbsp.nut butter
2 tbsp.apple sauce unsweetened
2 tbsp.sugar

instructions

Method for the filling

  1. 1Melt the butter in a saucepan on a low heat. Add the chocolate and let it melt into the butter. Remove from the heat and mix with a whisk until all the chocolate has melted.
  2. 2Add the rest of the filling ingredients and mix with a whisk. Set aside in a cool place to harden.

Method for the cake

  1. 3Preheat oven to 180 degrees.
  2. 4Melt the butter in a small saucepan. Remove from the heat and add the plant milk. Mix well and set aside.
  3. 5Add the flour, yeast, sugar and apple sauce to a mixer with a dough hook and mix for 30 seconds.
  4. 6Add the plant milk and butter mix with a pinch of salt to the mixer and mix well on a low speed for about 5 minutes until a very soft dough forms.
  5. 7Shape the dough into a ball, brush with oil, place in a large bowl, cover the bowl with cling film and set aside for about 1 hour until the dough has doubled in volume.
  6. 8Meanwhile, line the tin with parchment paper. Alternatively, grease the tin with margarine.
  7. 9Split the dough in half.
  8. 10Flatten out one half using a rolling pin, rolling it as thin as you can (about 2 mm thickness ).
  9. 11Spread half of the filling onto the flattened dough using a spatula and roll into a cylinder shape.
  10. 12Use a sharp knife to cut in half lengthwise.
  11. 13Twist the two halves around each other and place in the tin, cover with cling film and let rise for about 45 minutes.
  12. 14Repeat steps 7-10 with the other half of the dough.
  13. 15You can brush any leftover filling over the dough and sprinkle with sugar.
  14. 16After letting the dough rise for 45 mins, the two cakes are ready to go into the oven. Bake for about 40 minutes until they are firm to the touch.
  15. 17Remove the two cakes from the oven, put on a rack to cool and cover with a towel. Let cool for 1 hour.
