British Carrot Cake


Dough ingredients

230 gcarrots
170 graisins
280 gall-purpose flour
2 tsp.baking powder
170 gsugar
1 tsp.cinnamon ground
1 tsp.ginger ground
1 tsp.nutmeg
200 gvegan butter
200 mlorange juice
1 zest grated
0.5 tsp.vanilla extract
1 pinchsalt

Icing ingredients

120 gvegan butter
170 gicing butter
0,5 tsp.vanilla extract
 Cashew or sunflower seeds optional


  1. 1Preheat the oven to 170 degrees and line a baking tin.
  2. 2Mix the sugar and butter together in a mixing bowl until light and fluffy.
  3. 3Grate the carrots and add to the mix.
  4. 4Add the raisins, the orange juice and orange zest to the mix.
  5. 5Mix in the flour, salt, spices and vanilla and stir well.
  6. 6Pour the mixture into a greased baking tin and bake for approximately 20 minutes.
  7. 7To make the icing, blend the sugar and vanilla essence into the butter with a fork.
  8. 8Let the cake cool before icing. Optional: top with roughly hacked cashew nuts or sunflower seeds.
