These nut and date balls are perfect to take to school, to work or even after the gym. The walnuts and magnesium-rich cashews make them a healthy alternative to a sugar based snack.
Sweet nut and date balls
This recipe is very simple and can be made in next to no time. Let your blender do all the work! You can also freeze the nut and date balls to save for later so you’ve always got some snacks in store.
You can make them even more yummy by rolling the finished ball in coconut flakes or sesame seeds – or both! Coconuts and sesame are rich in healthy fats and fibre.
|50 g||cashew nuts|
|3 tbsp.||cocoa powder|
|30 g||coconut flakes|
|30 g||sesame seeds|
- Grind the nuts finely with a regular or immersion blender. Put the resulting nut flour in a bowl, then add the cocoa powder and a pinch of salt. Stir well until the mixture reaches a uniform colour.
- Pit the dates and cut them into pieces. Soak them in hot water for about 5 minutes. This makes them easier to blend. Soft dates can also be smashed with a fork after soaking.
- Add the dates to the nut and cocoa powder mixture. Then knead everything with your hand until you’ve created a sort of dough.
- Form the dough into balls about 2.5cm wide. Sprinkle some coconut flakes on a cutting board and roll half of the balls in the flakes.
- Roll the other half of the balls in the sesame seeds.
- Store them in the freezer for at least one hour, then serve them directly.
