One-bowl wonder! The classic rocky road gets a protein twist that’s super easy to make. Plus, these breakable, colourful bites make for a great edible gift, wrap up a batch and share with friends.
A little oil for greasing
180 g vegan dark chocolate, roughly chopped
50 g puffed brown rice
40 g sour cherries
40 g dried cranberries
50 g pistachios, roughly chopped
50 g hazelnuts, roughly chopped
1 scoop (34g) Chocolate Vega® Essentials
- Grease and line a small, square baking tray.
- Place the chocolate in a heat proof bowl over a pan of gently simmering water, stir the chocolate until melted making sure the base of the bowl doesn’t come into contact with the water. Once melted, remove the bowl from heat.
- Add the remaining ingredients to the bowl with the chocolate and stir well making sure all the ingredients are coated in the chocolate.
- Tip the mixture into your prepared tin, using the back of a spoon, flatten down and press into the corners to create an even layer. Chill for 1 to 2 hours before cutting into chunks.
